2007 colbalt over heating

On my 2007 colbalt 2.2 L. I had to replace
my radiator and condenser and my fan it
seems like it's running to hot before it
never got over 199 but now it goes to 217
and higher until I drive it it goes back to
194. And when I shut it off it shows 230
what made it start doing that. ????

That sounds like a pretty normal temperature cycle to me. The new radiator is allowing the coolant to flow through as it should and allowing the sensors to get a more accurate reading on what is actually going on with your cooling system. The temperature spikes a bit when you shut it off because the heat is trapped under the hood. The fan runs more to take care of that extra heat. Keep an eye on it, but I don't think you have anything to worry about.
