Why do I not have oil pressure??

I have a VW Golf mk1 - Turbocharged.
AGY block.
APK head.

Car was running perfectly (except for the lean fuel conditions) on stock ECU and 0.3 bar boost.
Because she was running too lean, I broke a piston.

So I replaced all pistons, rings, overhauled the head (re-seated valve stem seals etc). Gasket, timing belt, distributor, water bottle, oil pump, oil filter, spark plugs (I believe this may be my issue somehow), alternator.
So I pretty much replaced everything in this car except the crank itself and some gears.

She is complaining about oil pressure when over 2,500 rpm.
And she does not want to go when over 4,000 rpm. Almost like she jerks back and forth, she just won't pull to her full potential.
Currently she is pushing 150kW and I know I can get a lot more out of her if I can get her running properly again.

Running 95 pump gas.

Please help!!  :)
