This is my second motor in this truck in less than a year and I'm tired of this crap that dodge calls a motor. Has anyone taken the 3.7 v6 out and installed a 5.7 V8 into a similar setup?

Yep but you have to change everything, engine tranny, electronics, even exhaust and front springs. Big job but it can be done.
