2002 Trailblazer 4.2L oil pressure drops randomly

I did an oil change on this truck and after that, the oil pressure would randomly drop off.  I have connected a mechanical guage to verify.  I have changed the oil pump & pickup tube.  I recall when first draining the oil, there was much more than 7 quarts.  I did not think to measure the quantity, but I have changed enough oil in 25 years to recognise the time required to drain.  So I thought perhaps someone knew oil was not returning to the oil pan quickly enough.  So I have 10 quarts in it now.  

I am at a loss and am not sure where to go from here.  I am not familiar with this particular engine but have done work on many, many engines over the last 25 years.  This has me baffled.  Any help would be appreciated.
