overheating

in my 02 cavalier it will overheat and skyrocket to the red but 10 seconds later it goes back to the middle what cause this to happen?

Thermostat not opening when it should. Replace it and add new coolant. May want to give the cooling system the once over as well - check radiator for good flow, flush block and heater core, new thermostat, new coolant and bleed for air. If problem persists, replace engine coolant temp sensor.
