Car started running hot and I put water in it
and it's not getting to the motor and now the
motor is ticking

Probably the thermostat needs to be changed, or there is a bad water pump not circulating the coolant. Those are the fist things to check.

You do not want to be driving this until it is fix, or there would be damage to the engine.

Sitting still idling it stays one temperature but once we head up the road the temp hand goes up

I'm leaning toward the water pump. The impeller on the water pump will erode away, no fins to push the coolant threw the engine. But also the thermostat should be changed out anyway. Make sure the fans on the radiator are working properly.

What does it mean when we ran water through it to flush it out and it started tapping now it has a fart smell

The smell probably is coming from the catalytic converter from burning off all the impurities collected on it threw normal driving, and when the engine got hot so did the exhaust, so it just baked the impurities in the cat. If the smell is coming from the cooling system, then that means the cooling system had not ben serviced for a long time, and definitely the water pump would be suspect to your problem.
