Every time I touch my mass airflow sensor
my truck dies and misses??

Replace it or take a close look at it's wiring.

these measure very small voltages...your finger acts like a capacitor...might verify the chassis ground (cable to the motor block) is solid and not corroded, and your battery is putting out with a solid 12 volts...and not 5 or more years old (tin-antimony) batteries stop taking a charge and operate under reduced capacity~
