I have a 2006 Chevy Equinox. Temperature gauge shoots up to red, but not over heating. Jumps up and down. Fan works. Also I have no heat.

First thing is to check the coolant level, is it low?

I bet your thermostat is failing. It gets stuck causing the engine to get hot and then opens which cools it off and cycles over and over.
