I am going to change my front wheel bearing on my 2003 grand am, can I re-use the bearing nut

That all depends on the kind you have, if you have the kind that has nylon thread holder or is staked into place then no it must be replaced with a new nut, the only one that is reusable is the castle nut that uses a cotter pin to hold it in place.
