after driving around in town for awhile the temp gauge in the dash will go all the way up and straight back down to normal temp all within 3 seconds. Car hesitates during these 3 seconds

Update: I have replaced the coolant temp sensor and thermostat. This helped for 3 nights then it started up again. It happens maybe once an hour or so.
