My 95 gmc Sierra 2500 putters out when I give it gas. I replaced the fuel filter and fuel pump. What else could it be?

Fuel pressure regulator, mass air flow unit, throttle position sensor, plugged exhaust, just to mention a few. Do you have a check engine light on?
