Truck won't accelerate
My 2006 Silverado started giving me problems the other
day. The initial cold start in the mornings is fine, but after
driving for a while acceleration becomes sluggish and the
truck wont go anymore than 35 MPH. While this is
happening, if I come to a stop my RPMs drop 300, amlost
stalling the engine out. If i shut it off and wait about 5-7
mins, turns back on and runs fine for another while before
starting all over. I have read several different forums and
everything seems to point to the catalytic converters?

The cat is worth having checked out. But also clean the Mass Air Flow Sensor with MAF spray cleaner. No check engine light on, or reduced power on the dash?
Engine light is on but there is a laundry list, and no reduced power
Your going to have to follow the laundry list until it is all cleaned up.
