The temperature on my 2004 4.3L V6 Vortec is
reading around that second tick (approximately 185
degrees F) on the temp gauge. I have done a
coolant flush about a month ago and had the check
engine light scanned saying it was a thermostat
issue. When driving it stays constant at the 185
(about 10 degrees lower than the normal 195
degree range) with everything driving just nice, but
once I park or even shut the truck off and turn it on
to auxiliary, the reading goes up to about 200
degrees (just shy of the 210 reading mark).  Would
this indicate that the current thermostat is running
cold, or another issue gone bad in the cooling
system?

The heat soak will raise the temperature temporarily as there is no coolant flow. I would change the thermostat so that it runs at the correct 195 degrees.

Awesome thank you for your input and help with this question! And the appropriate thermostat that would comply with this Chevy 1500 Silverado would be a 195 degree thermostat correct?

Yes. If the engine runs cooler than that it may run rich as the ECU thinks the engine is not fully warmed up.
