Recently added mini light bar/fog lights in
my toe hop spacing and some LED light
strips under the bench seat, I ran the
power off the battery to the switch and the
power from the switch to the lights, then
the ground wire from the lights I just
mounted to the car for the ground instead
of the switch. Any issue here? They work
but is it a incomplete circuit because it's
not grounded to the switch?

If the switch has a metal mounting bracket, then it needs to be mounted to a good ground spot. Also your main ground for your lights should go to the frame.
No, it's not standard or necessary to return the ground to the switch the vehicle "body" chassis, carries many grounds. But you DO need a fuse in the powerline from the battery or connect to a fused terminal at the fuse box instead of battery direct.
Just run a fuse tap for the power and take it off the battery right ?
Yes. LEDs have a very low draw of amps.
