My 2000 cadillac deville dts overheats, plenty of antifreeze & water, new radiator, new water pump, new thermostat so what's the problem

My 2000 cadillac deville dts is overheating could the problem possible be a
water control valve for the heater system?

The car should not overheat whether you use the heater or not. I would check the thermostat, flush the system if you did not. Better yet use a backwash system that power flushes the system out. Also make sure the cooling fans are coming on and that the radiator hoses have not collapsed.

If you have a Northstar engine it's going to be the head gasket. They're notorious for failure! Have your mechanic test the cooling system for exhaust gases to confirm. If that's the case you're looking at upwards of $3500 to fix it. Not worth it! The engine and transmission both have to come out from the bottom of the car. There's no other way to do the job!
