The fan doesn't turn on when in traffic and the engine overheats but sometimes later it turn to life... can anyone help me?

I have a C320cdi W204 (2007) and I've made a trip last
week and when I was arrested on traffic I notice a message
on the dash board that says "check coolant level" and the
temperature raising, and I waited for the fan becomes to
function but when it reached the 120° C, I was forced to
shut down immediately so I don't burn down the engine.

When I finally arrived to the gas station I went to  the engine
compartment and I notice that the fan was working...

Later this situation repeats and I notice the same message
appears on the dash board... what I think it happens is that
every time the message appears on the dash board the fan
does not receive any signal to start working...

Can anyone help me out please?

Start with coolant level and mixture. Is it correct when engine cold? Fix that first. If correct and problem reoccurs, look to the coolant temp sensor There should be a code for this to confirm.

Another thing it could be is that the temperature sensor is misreading. I took my Mazda to my mechanic when it was overheating and he did all the tests my fans worked just fine, my coolant was not leaking and was mixed properly, but when he tested my temperature sensor it was reading 30-40 degrees above what the actual temperature was. After he replaced the sensor my car has worked just fine.
