my 1990 Ford 350 Econoline RV quits running when engine gets hot.

RV just quits running and stops. Usually happens approx 60 to 120 minutes of
driving & not pushing on gas pedal. Engine dies and refuses to start for about
30 minutes. Has never happened when driving less than a hour. It just started
happening after I had air conditioner converted to new freon. Could it be ECM
getting too hot & stops to cool down? Mechanic suggested 1990 Fords had
that problem.

Yes, that is what it sounds like, the Ignition Control Module. It is mounted on the side of the distributor.

I had a similar problem but it was the fuel pump (there are two). Replaced them both and the problem was resolved.
