Check coolant level, coolant leak? You should never have to top off coolant. replace thermostat if you do not know if it was ever replaced or can't remember. How old is coolant? 5 years is max for long life coolant. Any check engine codes? What are they? Is water pump belt driven? Belt broke? You did not add tap water recently did you? Lots of possibilities...
