How can I tell if my Subaru 2003 is really overheating when temp. Gauge goes high?

Besides coolant leaking out all over, I would trust the guage for now. You don't want to continue to over heat the engine, as you can warp or crack the head. Don't drive it anymore and get it check out ASAP.

you could always install an aftermarket temp gauge that reads an actual temperature.
