2019 Colorado not reading temp and fan is running

when the truck is running there is no temp reading and the fan is running even
when shut off

As the fans are computer controlled this sounds like either an open circuit in the ECT wiring or the sensor itself has went open. A decent scanner can show you what the computer is seeing for that system.

it was scanned and showed a PO128 code only. The day before everything was fine no issues the next day the temp stop showing then after driving to get home the check engine light went on...We can not find a thermostat anywhere everyone said back ordered with no eta so we were able to find a radiator sensor but we can not figure out where it goes we looked at all kinds of videos. the dealership said the truck is too new to be having a thermostat issue. The person who scanned it erased the code and everything went back to normal There were no issues so far but it was only driven 30 mins away will driving it cause any issues ? Thank you

That’s wrong, I have had thermostats fail with in a year. My Equinox was doing the same thing fans running and no heat showing on the gauge cause the thermostat wasn’t closing, replaced the thermostat and problems went away.
