Trouble starting 99 2.2 manual Sonoma

I have a 99 Sonoma with about 203k miles and it
runs great but occasionally lately it has began to
drink oil like a quart ever 6-800 miles not sure if it's
a leak or just because the truck is old oil hasn't
been changed in some time (was a gift from my
grandfather) and I plan to do so this week but the
problem is every so often, about 4 or 5 times a
month it will not turn over all lights on dash light up
and radio plays but will read 0 oil pressure and I
know gms have the oil safety sensor but I check the
oil and it's fine and it will pop start and run and oil
pressure is working again back up to 40-60 then
once warm settles around 40-45 it is very annoying
especially early in the morning before work to have
to pop start it and I can't figure out what the
problem is if it's the sensor or a fuse or something
more sinister and before I go to changing stuff out
I'd like to be a little more informed thank you

I would hook up an external oil gauge to check it possible you may have a defective gauge, Possible you are burning the oil and not leaking, if so could be a engine rebuild is needed, you can try to flush of the oil, I mean a flush not just emptying the system...there are products on the market that may help with the burning oil. Also using a thicker motor oil will help a little....
