I'm looking to swap out my 318 for a 360 out of a 99 ram will I have any problems and also I would like to put a standard tranny in what one would be my best option

a 360 is considered a big block, the bell housing is wider and matches the wider torque flight trans. .

The 318, 340, & 360 are the same. Choose any Mopar trans you like the torque-flight auto & I used a Hemi HD Dana? 4-spd too, as an old 273 then to 440 Cuda' owner once. JIMZ.

318, 340, & 360 are all high rev Mopar small blocks Mopar high torque big blocks are 383 wedge, 426 Hemi, & 440 wedge designs. I'm "old school" from the 273 small block, 413, 426 wedge engine era. 426 big port wedge hi-perf cyl heads fit on the 440, not too many people know this. I've done it.
