why does my 2001 taurus dashboard lights go out with only the 2 turning light signals on solid. It just happens randomly

That sounds like you have an intermittent cross circuit in the instrument cluster wiring, it could be a real bugger to find, I suggest you get a service manual that has a good wiring diagram and componet locator in it, it might be a little expensive but worth it if your going to keep the vehicle. If you can't find one try your local libraries reference section for a factory manual, then at least you can photocopy what you need.
