How hard would it be to put a rebuilt 350 in my truck

Question type: Car Customization

I have a 89 Chevy c1500 with a 350 in it. I am looking to
rebuild a different 350 and put it in to the truck. Something
me and my father can do together. How hard would it be to
do so. Plus is there anything I can do when rebuilding it to
give myself a little better mpg not looking to go green just
have a toy and be ok on gas. Thanks
