Too much oil in crank case at high speed would cause high oil pressure activating your oil pressure light, check your oil level. Could also be a faulty oil pressure sensor works fine at idle speeds but once oil pressure builds up it may stop working, there are two sensors usually on the vdubs low and high pressure change both of them their are cheap to buy and easy to replace.
