Over heating and pouring water out of the over flow

Just bought yesterday and was driving down the
road and it said it was over heating so i stoped and
let the engine cool down and added water and then
it started pouring out the overflow hose what could
cause this no exhaust smell in coolant or no water
in oil

Check your water pump

perform a pressure test on the engine to determine if the head- gasket isn't the issue even though you don't see an issue. Older Cadillac's like your with over 100K miles are susceptible.
