Suggest that you check the connection and wiring to the coolant sensor in the top radiator tank. The wire had broken (all but a few strands) on my Spider 2000 and it ran fine upon start-up but would die when warm. The computer did not receive a signal that the engine was warm and was making the fuel mixture too rich for a warm engine. This may not be your problem but the connection is quick and easy to check.

you will never start up it too hot, any sensor is out of order, fiat works always cool
