I have a 1963 shortbed unibody and I was wondering how many were made exactly it’s got a in-line 6 cylinder

Super rare, one sold at auction (Mecum) for over 30K, and it was an average restoration with modern updates (so not concourse). That's a big number considering what most older resto-mod trucks go for. Production numbers are: '61: 10,008, '62: 10,703, '63: 5456 (those are for the unibody trucks, not all trucks). I don't know what you paid for yours or plan on doing with it, but well worth investing money into (well, within reason).

I paid $1,500 for it and I plan on restoring it but with a modern engine so I can drive it daily without worries

HAY Ken f. do you know exactly how many 1963 "wrong beds" were made?
