Why is my 2003 ford taurus overheating with no thermostat?

No thermostat will cause one to over heat. Replace thermostat. Check that coolant level is full. Check that water pump is pumping. Check that neither top or bottom radiator hose is collapsing. If all that checks out then I would start checking for blown head gasket.
