How to set of ev operation only

The manual is not very good and the sales person was worst.  How do I set for only battery (Ev) operation without the engine kicking in?

Button in front of the shift knob (under the climate control, next to the Fuel Door Release button) lets you select one of three modes: AUTO, EV Now, or EV LATER. However, EV availability is limited to at least the following variables: 1) Charge level of the Plug-in battery (available mileage estimate may be displayed via the control settings). 2) Cold Temperatures - heat comes from the engine, so the engine runs until it reaches a sufficient temperature to heat the cabin (see alternatives below). 3) System Efficiency - rarely but occasionally, the engine may run while you may expect it not to because it's got plenty of charge remaining; this is system maintenance and does not last long. Using the Remote Start, you may pre-heat the seats (the heater still runs the engine awhile), or run the air conditioner from AC shore power in order to prepare the cabin temperature prior to driving; thereby preserving battery energy for driving only. I wear my coat when it's cold and don't bother running the heat (during EV mode) unless the windows get foggy, or it's too darn cold to care about a little gasoline.
