How many quarts and what is the best type of oil for the '87 325i?
I believe 5 qts. and go with the oil weight recommended on the cap, probably 5W30.

This really depends on the weather where you live--but 10-30W is great. I can't believe I don't know how many quarts it takes, I haven't changed my own oil since I owned a Bronco, sorry!
just start with like 4 and a half quarts, go for a drive and check it to see if you need to add more
