What could be wrong with my 2003 mazda 6 2.3l V4?

The thing that marks when your car is
cold,warm or hot it stays in the middle and
goes down to cold while the car is running it
also feels like it's going to turn off I think it
could be te thermostat but I'm not sure.

The thermostat controls the temperature your motor runs at. Sounds like it is stuck open. Replace thermostat. The gage you are reading is the temperature gage for the motor.
